Healthy Coconut Bars


 These no-bake coconut bars combine creamy Greek yogurt and shredded coconut, then get dipped in rich dark chocolate. They’re simple to make, naturally lower in sugar, and perfect for a quick snack or light dessert.

Ingredients

  • 80 g unsweetened shredded coconut

  • 150 g plain unsweetened Greek yogurt

  • 100 g sugar-free dark chocolate (70–85% cocoa or keto-friendly)

  • Optional: 1 extra tablespoon Greek yogurt (if mixture is too dry)

Optional flavor additions:

  • 1 teaspoon vanilla extract

  • 1 tablespoon organic honey (if you prefer a touch of sweetness)

Instructions

1. Make the coconut mixture
In a bowl, combine the shredded coconut and Greek yogurt. Stir well with a spoon or spatula until fully incorporated. If the mixture seems too dry or crumbly, add an extra tablespoon of yogurt.

2. Shape the bars
Using your hands, form the mixture into small rectangular bars. For even shapes, you can use a measuring spoon or silicone mold. Place the bars on a tray lined with parchment paper or plastic wrap. Freeze for 1 hour, until firm.

3. Coat with chocolate
Melt the dark chocolate using a double boiler or in the microwave (heat in 30-second intervals, stirring between each). Remove the bars from the freezer. Dip each bar into the melted chocolate using a fork or spatula, allowing any excess to drip off. Place the coated bars on a rack or parchment-lined tray.

4. Final chill
Refrigerate or freeze for about 15 minutes, until the chocolate is fully set.

Storage & Tips

  • Storage: Keep bars in an airtight container in the refrigerator for up to 5 days, or in the freezer for up to 1 month.

  • Customize: Add vanilla extract or honey to the coconut mixture for extra flavor.
