This simple, five-ingredient dish brings together tender chicken thighs and buttery cabbage in a rich, savory broth. It’s the kind of no-fuss meal that fills the house with a comforting aroma and has everyone asking when supper will be ready.
Prep time: 10 minutes
Cook time: 50–60 minutes
Servings: 4
Difficulty: Easy
Ingredients
1 small to medium head green cabbage, cored and cut into wedges
4–5 boneless, skinless chicken thighs (or chicken breasts for even lower points)
1 tablespoon light butter (or reduced-fat butter)
1 cup low-sodium chicken broth
1 teaspoon salt (or to taste)
Optional seasonings: black pepper, garlic powder
Instructions
1. Preheat and prep
Preheat your oven to 375°F (190°C). Lightly grease a baking dish large enough to hold the cabbage wedges and chicken in a single layer.
2. Assemble the dish
Arrange the cabbage wedges in the bottom of the baking dish. Place the chicken thighs on top of the cabbage. Pour the chicken broth evenly over everything. Dot the butter in small pieces over the chicken and cabbage. Sprinkle with salt and any optional seasonings.
3. Bake covered
Cover the dish tightly with foil and bake for 35–40 minutes.
4. Bake uncovered
Remove the foil and continue baking for 15–20 minutes, until the chicken is golden, tender, and cooked through (internal temperature of 165°F / 74°C), and the cabbage is soft.
5. Serve
Spoon the chicken, cabbage, and plenty of the rich broth into shallow bowls.
Serving Suggestions
Serve with mashed potatoes, buttered egg noodles, or crusty bread to soak up the juices. Warm dinner rolls, steamed carrots, or a simple green salad make excellent sides. For a true Midwestern touch, offer a jar of dill pickles or a spoonful of sauerkraut on the side.
Variations & Tips
Slow cooker method: Layer the cabbage and chicken in a slow cooker, add broth and butter, and cook on LOW for 4–5 hours or HIGH for 2½–3 hours, until the chicken is tender and cooked through.
Chicken breast option: Substitute boneless, skinless chicken breasts for an even lower-point meal. Check for doneness a few minutes earlier to avoid drying out.
Extra flavor: Add a sliced onion to the bottom of the dish, or sprinkle with paprika and fresh thyme before baking.
Storage: Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat gently on the stovetop or in the microwave.
