Slow Cooker Chicken Teriyaki
A savory-sweet classic made effortlessly in your slow cooker—tender chicken in a rich, glossy sauce that tastes like takeout, but better.
There's something deeply satisfying about a meal that cooks itself while you go about your day. This chicken teriyaki is exactly that—tender chunks of chicken slowly simmered in a sweet-savory sauce that thickens into a glossy, flavourful glaze. It's the kind of dinner that makes you look like you put in way more effort than you actually did.
Serve it over rice, noodles, or stir-fried vegetables, and you've got a meal that's equal parts comforting and impressive. Plus, it's practically foolproof.
Why You'll Love This
Set it and forget it – the slow cooker does all the work while you're busy.
Rich, authentic flavour – soy sauce, brown sugar, rice vinegar, garlic, and ginger come together in perfect harmony.
Tender, shreddable chicken – low and slow cooking makes the meat fall-apart soft.
Versatile – serve over rice, noodles, or veggies. The possibilities are endless.
Great for leftovers – the flavours only get better the next day.
Ingredients
Ingredient Amount Notes Boneless, skinless chicken breasts 3 lbs Cut into chunks Low-sodium soy sauce ¾ cup Brown sugar ¾ cup Light or dark both work Rice vinegar ⅓ cup Adds brightness and tang Garlic 2 cloves, minced Or 1 tsp jarred minced garlic Ground ginger ¾ tsp Cornstarch 4 tsp For thickening the sauce Warm water ¼ cup For the cornstarch slurry Green onions ¼ cup, finely chopped For garnish Instructions
1. Layer the chicken
Place the chicken chunks at the bottom of a 4‑quart (or larger) slow cooker. This allows the meat to sit directly in the sauce and absorb all those rich flavours as it cooks.
2. Make the sauce
In a medium bowl, whisk together the soy sauce, brown sugar, rice vinegar, minced garlic, and ground ginger until the sugar dissolves and the mixture is smooth. Pour the sauce evenly over the chicken, making sure it's mostly covered.
3. Cook low and slow
Cover the slow cooker with the lid and cook on LOW for 4–5 hours. The chicken is ready when it's tender enough to shred with a fork. (If you're short on time, HIGH for 2½–3 hours works, but LOW is better for texture.)
4. Thicken the sauce
Remove the chicken from the slow cooker and set it aside on a plate or cutting board. In a small bowl, mix the cornstarch with the warm water to form a smooth slurry. Gradually whisk the slurry into the sauce in the slow cooker. Keep the cooker on the warm setting and stir until the sauce thickens—this usually takes about 2–3 minutes.
5. Return the chicken
Shred the chicken with two forks (or chop it into bite-sized pieces) and return it to the slow cooker. Stir well to coat the chicken in the thickened, glossy sauce.
6. Garnish and serve
Sprinkle with green onions and, if you like, a few sesame seeds or a drizzle of sesame oil for extra depth. Serve over steamed rice, noodles, or alongside stir-fried vegetables.
Variations & Tips
Thighs instead of breasts – boneless, skinless chicken thighs work beautifully here. They're even more forgiving and stay incredibly moist.
Extra veg – add sliced bell peppers, broccoli florets, or snap peas during the last 30 minutes of cooking for a complete one‑pot meal.
Spice it up – stir in a pinch of red pepper flakes or a dash of sriracha for a little heat.
Fresh ginger – if you have fresh ginger on hand, grate about 1 tablespoon and use it instead of ground ginger. The flavour is brighter and more vibrant.
Thicker sauce – if you prefer a thicker glaze, double the cornstarch slurry and stir it in gradually until you reach the desired consistency.
