Oven-Baked Cowboy Butter Pasta
Rich, garlicky, herbaceous, and ridiculously easy—this baked pasta creates its own buttery sauce as it cooks.
There's something almost magical about this recipe. You start with dry spaghetti, a stick of butter, garlic, herbs, and hot water. No boiling. No separate sauce. No multiple pots. You just layer everything in a dish, pop it in the oven, and somehow—like cowboy magic—the liquid transforms into a glossy, flavour-packed sauce that coats every strand of pasta.
The name "Cowboy Butter" usually refers to that punchy, herby melted butter you serve with steak. But here? It becomes the sauce itself. Rich, savoury, garlicky, and ridiculously satisfying. The perfect weeknight dinner when you want something that feels special without the fuss.

Ingredients
Ingredient Amount Notes Dry spaghetti (or thin spaghetti) 12 oz Break in half before using Salted butter 1 cup (2 sticks), melted Salted gives the best flavour Garlic 4 cloves, finely minced Or about 1 tbsp jarred minced garlic Italian seasoning 2 tbsp, heaping Or dried parsley blend Salt 1 tsp (optional) Taste first—salted butter may be enough Black pepper ½ tsp (optional) Hot water 2½ cups Not boiling, just hot from the tap is fine Instructions
1. Preheat and prepare
Preheat your oven to 400°F (200°C) . Lightly grease a 9×13‑inch casserole dish with cooking spray or a little butter.
2. Add the pasta
Break the spaghetti in half and spread it evenly across the bottom of the prepared dish. Don't worry if it looks like a jumbled nest—that's exactly how it should be.
3. Mix the cowboy butter sauce
In a large bowl or measuring cup, whisk together the melted butter, minced garlic, Italian seasoning, salt (if using), and black pepper.
4. Add the hot water
Whisk the hot water into the butter mixture until combined. It won't look like a traditional sauce—it will be thin and liquid. Trust the process.
5. Pour it over the pasta
Pour the garlic‑herb butter mixture evenly over the dry pasta. Use tongs or a fork to gently press the noodles down into the liquid, making sure most of them are submerged.
6. Cover and bake
Cover the dish tightly with foil and bake for 25 minutes. This steaming phase is what cooks the pasta through.
7. Uncover and toss
Carefully remove the foil, watching for the steam. Use tongs to toss the noodles well, separating any clumps and coating them in the sauce that has started to form.
8. Finish uncovered
Return the dish to the oven uncovered and bake for another 10–15 minutes, tossing once halfway through if you remember. The pasta is ready when it's tender and most of the liquid has been absorbed into a glossy, buttery sauce.
9. Rest and serve
Give the pasta one final toss after baking. Let it rest for 3–5 minutes before serving. This allows the sauce to settle and thicken slightly.
Variations & Tips
Add protein – toss in cooked shredded chicken, grilled shrimp, or crumbled sausage during the final toss for a heartier meal.
Make it cheesy – sprinkle grated Parmesan or Pecorino over the top during the last 5 minutes of baking.
Add a kick – stir in a pinch of red pepper flakes with the garlic for a little heat.
Fresh herbs – if you have fresh parsley, basil, or thyme on hand, stir them in at the end for a bright finish.
Citrus twist – a squeeze of lemon juice over the finished pasta lifts all the flavours beautifully.
Storage & Reheating
Fridge – store leftovers in a covered container for up to 3 days.
Reheat – microwave individual portions until hot. For larger amounts, reheat in a 350°F oven, covered, for 15–20 minutes. Add a splash of water or broth if it seems dry.
