Oklahoma Fried Onion Burgers

Incredibly easy and insanely delicious, these burgers get their signature flavor from thinly sliced onions smashed directly into the beef patties. As the patties cook, the onions turn golden and caramelized, creating a crispy, savory crust. This recipe is adapted from Cook’s Country.

Ingredients

  • 1 large white onion, thinly sliced

  • 1 lb ground beef (80/20 blend recommended)

  • Salt and freshly ground black pepper, to taste

  • 4 slices American cheese

  • 4 hamburger buns, toasted

  • Optional toppings: mustard, pickles

Instructions

  1. Prepare the onions
    Slice the onion into very thin rings (about ⅛ inch thick). Sprinkle with a pinch of salt and let sit for about 10 minutes. This softens the onions slightly and helps them caramelize faster.

  2. Form the beef balls
    Divide the ground beef into 4 equal portions and roll each into a ball. Season each ball generously with salt and pepper.

  3. Combine beef and onions
    Take a portion of the sliced onions and arrange them on a flat surface (a cutting board or piece of parchment works well). Place a seasoned beef ball directly on top of the onions, then press down firmly to flatten it into a thin patty, embedding the onions into the meat. Repeat with the remaining beef and onions.

  4. Cook the patties
    Heat a large skillet or griddle over medium-high heat. Once hot, add the patties onion‑side down. Cook until the onions are deeply caramelized and the edges are crisp, about 2–3 minutes. Flip the patties and cook the other side until browned, about 2 minutes more.

  5. Add cheese
    Lay a slice of American cheese on each patty. Cover the skillet for about 30 seconds to let the cheese melt.

  6. Assemble and serve
    Place each cheesy patty on a toasted hamburger bun. Add mustard, pickles, or any other toppings you like. Serve immediately.
