No‑Bake Chocolate Éclair Cake

This might be the easiest no‑bake dessert you’ll ever make. Layers of creamy vanilla pudding, graham crackers, and a rich chocolate topping come together in the fridge. It tastes like a classic chocolate éclair with almost zero effort.

Ingredients

  • 2 packages (3.5 oz each) instant vanilla pudding mix

  • 1 container (8 oz) frozen whipped topping (like Cool Whip), thawed

  • 3 cups cold milk

  • 2 sleeves graham crackers (about 18–20 full squares)

  • 1 tub (16 oz) chocolate frosting

Instructions

  1. Make the pudding layer
    In a large bowl, whisk together the two packages of instant vanilla pudding mix and 3 cups of cold milk until smooth and slightly thickened, about 2 minutes.

  2. Fold in the whipped topping
    Gently fold the thawed whipped topping into the pudding mixture until fully combined and fluffy.

  3. Layer the cake

    • Arrange a single layer of graham crackers in the bottom of a 9×13‑inch baking dish, breaking crackers as needed to fit.

    • Spread half of the pudding mixture evenly over the graham crackers.

    • Add another layer of graham crackers.

    • Top with the remaining pudding mixture, spreading it smooth.

    • Finish with a final layer of graham crackers.

  4. Make the chocolate topping
    Remove the lid and foil from the tub of chocolate frosting. Microwave it in 15‑second intervals, stirring each time, until it is pourable (about 30–45 seconds total). Do not overheat.

  5. Top and chill
    Pour the warm, softened frosting over the top graham cracker layer. Spread it gently to cover completely.
    Cover the dish with plastic wrap and refrigerate for at least 4 hours, or overnight. This lets the graham crackers soften into a cake‑like texture.

  6. Serve
    Cut into squares and serve cold. Store leftovers in the refrigerator.

Tip: For a homemade chocolate ganache, you can replace the tub of frosting with 1 cup semi‑sweet chocolate chips and 1/2 cup heavy cream, melted together, but the frosting version is the classic shortcut.
