Slow Cooker Poor Man’s Potato & Butter Beans

A budget-friendly, set-it-and-forget-it meal that turns just a few pantry staples into a rich, creamy, and satisfying dish.

Yield: 4–6 servings
Cook time: Low 6–8 hours or High 3–4 hours

Ingredients

  • 2 lbs russet or yellow potatoes, cut into 1-inch chunks

  • 2 cans (15 oz each) butter beans (lima beans), drained and rinsed

  • 4 tbsp bacon grease, lard, or unsalted butter

  • 4 cups water

  • 1 tsp salt (adjust to taste)

  • ½ tsp black pepper (optional)

Instructions

  1. Layer the potatoes – Place the potato chunks evenly in the bottom of a 4–6 quart slow cooker.

  2. Add beans and fat – Scatter the butter beans over the potatoes. Dot the bacon grease (or butter) on top so it melts down into the mixture.
    Tip: Bacon grease adds a subtle smoky depth, especially since we’re using water instead of broth.

  3. Season and cook – Pour in the water, then add salt and pepper. Cover and cook on LOW for 6–8 hours or HIGH for 3–4 hours, until potatoes are very tender and the liquid is slightly thick and cloudy.

  4. Stir gently – Give the dish a gentle stir before serving.
    Tip: Lightly mashing some of the potatoes against the side of the slow cooker helps thicken the broth into a rustic, creamy sauce that coats the beans.

Serving suggestion
Enjoy on its own or with crusty bread to soak up the savory, gravy-like broth.
