Makes 2 loaves
Ingredients
For the dough:
1 lb (450g) pizza dough or bread dough (store-bought or homemade)
1 tbsp olive oil (for brushing)
For the filling (the "garbage" – use what you have!):
1 cup cooked ground beef, sausage, or chopped ham
1 cup shredded mozzarella cheese
½ cup shredded cheddar cheese
½ cup pepperoni slices or cooked bacon bits
¼ cup diced bell peppers or onions (optional)
¼ cup sliced black olives or pickled jalapeños (optional)
¼ cup pizza sauce or BBQ sauce (optional, for moisture)
Seasoning & finish:
1 tsp garlic powder
1 tsp Italian seasoning
2 tbsp melted butter mixed with ½ tsp garlic salt (for brushing)
Instructions
Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper.
Prep the dough
Roll out the dough on a lightly floured surface into a large rectangle, about 10x14 inches.Add the fillings
Spread your choice of sauce lightly down the center (if using). Layer the meats, veggies, and then both cheeses evenly over the dough. Sprinkle with garlic powder and Italian seasoning.
Tip: Don’t overfill – about ½ to 1 cup total filling per loaf is plenty.Roll it up
Starting from the long side, roll the dough tightly like a cinnamon roll. Pinch the seam and ends closed to seal. Place seam-side down on the baking sheet.Brush and slash
Brush the top with olive oil. Make 4–5 shallow slits across the top to let steam escape.Bake
Bake for 20–25 minutes, until golden brown and crispy. Halfway through, brush with the melted butter/garlic salt mixture for extra flavor.Cool slightly & serve
Let rest for 5 minutes before slicing. Serve warm with marinara, ranch, or extra sauce for dipping.
Variations
Breakfast Garbage Bread: scrambled eggs, cooked sausage, bacon, cheddar.
Veggie Garbage Bread: spinach, mushrooms, roasted zucchini, feta, and mozzarella.
Buffalo Chicken Garbage Bread: shredded chicken, buffalo sauce, cream cheese, and blue cheese crumbles.
