Amish Sour Cream Noodles


 Ingredients

  • 12 oz egg noodles

  • 1 cup sour cream

  • 3 tbsp butter

  • ½ cup cottage cheese (optional, for extra creaminess)

  • 1 small onion, finely chopped (optional)

  • Salt and black pepper, to taste

  • 1–2 tbsp fresh parsley, chopped (optional, for garnish)

Instructions

  1. Cook the noodles
    Bring a large pot of salted water to a boil. Add the egg noodles and cook according to package directions until tender. Drain well and set aside.

  2. Sauté the onion (optional)
    In a large skillet or saucepan, melt the butter over medium heat. If using onion, add it and cook until soft and translucent, about 3–4 minutes.

  3. Make the creamy sauce
    Reduce the heat to low. Stir in the sour cream (and cottage cheese, if using). Warm gently, stirring often, until smooth and heated through. Do not let it boil — boiling can cause the sour cream to curdle.

  4. Combine noodles and sauce
    Add the drained noodles to the skillet. Toss gently until every noodle is coated in the creamy mixture.

  5. Season and serve
    Season with salt and pepper to taste. Garnish with fresh parsley if desired. Serve immediately while warm and silky.

Serving suggestion
These noodles are delicious on their own or as a side dish with roasted chicken, pork chops, or a simple green salad
