A lighter twist on a classic campfire treat—layers of chocolate pudding, whipped topping, and graham crackers come together in a frozen dessert that’s perfect for summer or any time you’re craving something cool and sweet.
Yields: 24 pieces
Ingredients
12 full graham cracker sheets (24 squares total)
1 box (1.4 oz) sugar-free chocolate pudding mix
2 cups fat-free skim milk
6 oz fat-free Cool Whip (or other frozen whipped topping, thawed)
Instructions
1. Make the pudding
In a medium bowl, whisk together the pudding mix and milk until combined. Let sit for 5 minutes to thicken.
2. Form the first layer
Line an 8×10-inch baking pan with parchment paper. Spread the pudding evenly across the bottom of the pan. Place the pan in the freezer for about 1 hour, or until the pudding is firm and frozen.
3. Add the whipped layer
Spread the Cool Whip evenly over the frozen pudding layer. Return the pan to the freezer and freeze until the whipped topping is firm (about 1–2 hours).
4. Assemble the graham cracker layers
Break the graham cracker sheets into individual squares (you should have 24 squares total). Remove the pan from the freezer. Arrange 12 of the graham cracker squares over the frozen whipped topping in a single layer.
Place a baking sheet or large cutting board over the pan, then carefully flip the entire assembly over so the graham crackers are now on the bottom. Remove the parchment paper from what is now the top. Arrange the remaining 12 graham cracker squares on top, pressing gently to adhere.
5. Cut and serve
Using a sharp knife, carefully cut the layered block into 24 equal pieces (cut lengthwise into 4 strips, then crosswise into 6 pieces). Serve immediately, or return to the freezer until ready to enjoy.
Tips & Variations
Make it ahead: These freeze beautifully. Store in an airtight container with parchment between layers for up to 1 month.
Full-fat version: Use regular chocolate pudding mix, whole milk, and regular Cool Whip for a richer result.
Add crunch: Sprinkle crushed graham crackers or mini chocolate chips between the layers for extra texture.
Serving suggestion: Let the frozen pieces sit at room temperature for 2–3 minutes before serving for a slightly softer bite.
