Copycat Willow Tree Chicken Salad with Bacon


 This chicken salad captures the slightly sweet, creamy style of the beloved Willow Tree version, with crispy bacon stirred right in. It comes together quickly and tastes even better after a short chill—perfect for sandwiches, crackers, or a bed of greens.

Yields: About 4–6 servings

Ingredients

  • 1 lb cooked chicken breast, shredded (or 1 large rotisserie chicken, shredded)

  • 1 cup mayonnaise

  • 6 slices bacon, cooked until crisp, cooled, and chopped or crumbled

  • 3 tablespoons celery, finely chopped

  • 3 tablespoons onion, finely chopped

  • 1 tablespoon brown sugar

  • ¼ teaspoon garlic powder

  • Salt and pepper, to taste

Instructions

  1. Combine ingredients
    In a medium mixing bowl, combine the shredded chicken, mayonnaise, bacon, celery, onion, brown sugar, garlic powder, and a pinch of salt and pepper.

  2. Mix well
    Stir until everything is evenly incorporated. Taste and adjust seasoning with additional salt and pepper if needed.

  3. Chill (optional but recommended)
    For best flavor, cover and refrigerate for at least 30 minutes to let the flavors meld.

  4. Serve
    Serve on croissants, your favorite bread, or with crackers and fresh greens.
