Crockpot Cabbage Roll Casserole

All the flavor of classic cabbage rolls without the rolling. This slow cooker casserole layers cabbage with a seasoned ground meat and rice mixture, then cooks low and slow into a comforting, hearty meal.

Ingredients

  • 1 large head of cabbage, chopped

  • 1 lb ground beef or ground turkey

  • 1 cup uncooked long-grain white rice

  • 1 onion, chopped

  • 2 cloves garlic, minced

  • 1 can (28 oz) crushed tomatoes

  • 1 can (15 oz) tomato sauce

  • 1 tablespoon Worcestershire sauce

  • 1 teaspoon dried oregano

  • 1 teaspoon dried basil

  • Salt and pepper, to taste

  • 1 cup shredded cheese (optional, for topping)

Instructions

1. Cook the meat
In a large skillet over medium heat, brown the ground meat until fully cooked. Drain any excess fat and set aside.

2. Sauté aromatics
In the same skillet, add the chopped onion and garlic. Sauté for 2–3 minutes until the onion is translucent.

3. Make the filling
In a large bowl, combine the cooked meat, sautéed onion and garlic, uncooked rice, crushed tomatoes, tomato sauce, Worcestershire sauce, oregano, basil, salt, and pepper. Mix well.

4. Layer in the crockpot
Spread half of the chopped cabbage in the bottom of the slow cooker. Spoon half of the meat mixture over the cabbage. Repeat with the remaining cabbage and meat mixture.

5. Cook
Cover and cook on LOW for 6–8 hours or on HIGH for 3–4 hours, until the cabbage is tender and the rice is fully cooked.

6. Add cheese (optional)
If using cheese, sprinkle it over the top during the last 30 minutes of cooking. Cover and let melt.

7. Serve
Garnish with fresh parsley or dill if desired. Serve with crusty bread or a simple green salad.

Variations

  • Different protein: Substitute ground chicken, Italian sausage, or a mix of ground pork and beef.

  • Add vegetables: Stir in diced bell peppers with the onion for extra color and sweetness.

  • Smoky flavor: Add 1 teaspoon smoked paprika to the meat mixture.

Tips & Notes

  • Rice distribution: Make sure the rice is evenly mixed so it cooks uniformly.

  • Liquid level: If the casserole seems dry during cooking, add a little more tomato sauce or broth.

  • Quick version: Use pre-cooked rice and reduce cooking time to 3–4 hours on LOW or 2–3 hours on HIGH.

  • Prep ahead: Chop the cabbage the night before and store in the refrigerator to streamline assembly.

  • Seasoning: Taste before serving and adjust salt, pepper, or herbs as needed.

Storage

Store leftovers in an airtight container in the refrigerator for up to 4 days. Reheat gently in the microwave or on the stovetop. This casserole also freezes well for up to 3 months.
