Overview
Prep Time: 15 minutes
Cook Time: 4–6 hours (low) or 2–3 hours (high)
Total Time: 4–6 hours
Servings: 6
Difficulty: Beginner
Ingredients
For the Beef Patties
2 lbs ground beef (80/20 blend recommended)
1 large egg, lightly beaten
½ cup plain breadcrumbs (or crushed saltine crackers)
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon Worcestershire sauce
½ teaspoon salt
½ teaspoon black pepper
For the Gravy
2 cans (10.5 oz each) condensed cream of mushroom soup
1 packet (1 oz) brown gravy mix
2 cups beef broth (or water)
1 packet (about 1 oz) onion soup mix (optional, for extra flavor)
8 oz fresh mushrooms, sliced (white or cremini)
1 medium onion, thinly sliced (optional)
For Serving
Mashed potatoes, rice, or egg noodles
Fresh parsley, chopped (for garnish)
Instructions
1. Make the patties
In a large mixing bowl, combine the ground beef, egg, breadcrumbs, garlic powder, onion powder, Worcestershire sauce, salt, and pepper. Mix gently with your hands until just combined—don't overwork the meat or the patties will become tough.
Form the mixture into 6 equal oval or round patties, about ¾ inch thick.
2. Brown the patties (optional but recommended)
For deeper flavor, heat a large skillet over medium-high heat with a splash of oil. Brown the patties in batches, about 3 to 4 minutes per side, until nicely seared. They don't need to be cooked through—just browned. Transfer the patties to the slow cooker as they're done.
Skip the skillet? You can place the raw patties directly into the slow cooker. The flavor won't be quite as rich, but it will still be delicious.
3. Prepare the gravy
In a medium bowl, whisk together the cream of mushroom soup, brown gravy mix, beef broth, and onion soup mix (if using) until smooth.
4. Layer in the slow cooker
Place the browned (or raw) beef patties in the bottom of the slow cooker in a single layer, overlapping slightly if needed. Scatter the sliced mushrooms and onions over and around the patties.
Pour the prepared gravy mixture evenly over everything, making sure the patties are mostly covered.
5. Cook
Cover and cook on LOW for 4 to 6 hours or on HIGH for 2 to 3 hours, until the patties are tender and cooked through and the gravy has thickened.
6. Serve
Carefully remove the patties to a serving platter. Spoon the mushroom gravy generously over the top. Garnish with fresh parsley and serve hot over mashed potatoes, rice, or egg noodles.
Variations & Tips
Add cheese: Top each patty with a slice of provolone or Swiss cheese during the last 15 minutes of cooking for a cheeseburger-style twist.
Make it richer: Stir in ½ cup of sour cream or heavy cream during the last 30 minutes of cooking for an extra-creamy gravy.
Add more veggies: Throw in some sliced bell peppers or carrots along with the mushrooms.
Thicker gravy: If the gravy is too thin when done, remove the patties and whisk in a slurry of 2 tablespoons cornstarch mixed with 2 tablespoons cold water. Return to the slow cooker and cook on HIGH for 10–15 minutes until thickened.
Leaner beef: If using lean ground beef (90/10), add a tablespoon of olive oil to the patty mixture to keep them moist.
Storage & Reheating
Refrigerator: Store leftovers in an airtight container for up to 4 days.
Freezer: Freeze cooled patties and gravy in a freezer-safe container for up to 3 months. Thaw overnight in the refrigerator before reheating.
Reheating: Reheat gently on the stovetop over low heat or in the microwave until hot. Add a splash of beef broth if the gravy has thickened too much.
