The Rich & Creamy Keto Cheesecake Fluff

Ingredients:

  • Base:

    • 8 oz (1 block) cream cheese, softened to room temperature

    • 1 cup heavy whipping cream, very cold

    • ⅓ - ½ cup powdered keto sweetener (like erythritol, monk fruit, or allulose), adjust to taste

    • 1 tsp vanilla extract

    • Pinch of salt

  • Optional Add-Ins (Pick one):

    • 1 tbsp lemon juice for a tangy version

    • 2 tbsp unsweetened cocoa powder for a chocolate version

    • 1 tsp lemon zest or ½ tsp almond extract for flavor variations

👩‍🍳 Step-by-Step Instructions

The process for both versions is nearly identical, with one key difference: in Version 1, you mix all ingredients together at once, while in Version 2, you whip the cream separately for a fluffier texture.

For  (Lighter "Sweet Tooth Saver"):

  1. Combine the Base: In a large bowl, use an electric hand mixer to beat the Greek yogurt and softened light cream cheese together until completely smooth and lump-free.

  2. Add Remaining Ingredients: Add the sugar-free pudding mix and your optional sweetener, and mix until combined. While mixing on low, slowly pour in the almond milk and cold water. This gradual addition helps prevent splashing and creates a smoother fluff.

  3. Beat Until Fluffy: Increase the mixer speed to medium-high and continue beating for 2-3 minutes. The mixture will noticeably thicken into a creamy, fluffy pudding-like texture.

  4. Chill: Divide the fluff evenly into 4-6 small bowls or dessert cups. Cover and refrigerate for at least 30 minutes to allow it to fully set
