Slow Cooker Chicken Stew


 This easy slow cooker chicken stew is like classic beef stew’s lighter cousin. Tender chicken, a rich creamy broth, and plenty of vegetables make it a filling, healthy meal. Just brown the chicken, toss everything in the crockpot, and let it work its magic.

Ingredients

  • 2 Tbsp olive oil

  • 1½ lbs chicken thighs, cut into 1‑inch pieces

  • 3 Tbsp all‑purpose flour

  • 1 tsp dried thyme

  • 1 tsp dried rosemary

  • ½ tsp salt, plus more to taste

  • 6 cloves garlic, minced

  • 1 onion, diced

  • 3 carrots, peeled and sliced

  • 2 large potatoes (about 1 lb), cut into ½‑inch cubes

  • 3 cups chicken broth

  • 1 bay leaf

  • ½ cup milk

  • 1 cup frozen green peas

  • Black pepper, to taste

Instructions

  1. Season the chicken – Pat chicken pieces dry, then season generously with salt and pepper.

  2. Brown the chicken – Heat olive oil in a large skillet over medium‑high heat. Add chicken and cook for 4–5 minutes until browned on all sides (it doesn’t need to be cooked through).
    Tip: If your slow cooker has a stovetop‑safe removable pot, you can brown the chicken directly in that pot, then return it to the base.

  3. Coat with flour & herbs – Transfer the browned chicken to the slow cooker. Add flour, thyme, rosemary, and ½ tsp salt. Stir until the chicken is well coated.

  4. Add vegetables & broth – Add garlic, onion, carrots, and potatoes to the slow cooker. Stir to combine. Pour in the chicken broth and add the bay leaf.

  5. Slow cook – Cover and cook on Low for 7–8 hours or on High for 3–4 hours.

  6. Finish with peas & milk – Once cooking is complete, add the frozen peas and milk. Stir, then cook on High for an additional 10–15 minutes until the peas are warmed through.

  7. Adjust consistency – If the stew is too thin, stir in a little more flour (dissolved in a tablespoon of cold water first). If too thick, add a splash of chicken broth.

  8. Season & serve – Taste and adjust salt and pepper as needed. Serve immediately.

Storage & Leftovers

  • Refrigerator – Store in an airtight container for up to 5 days.

  • Freezer – Freeze for up to 3 months. Thaw overnight in the fridge before reheating.
