Prosciutto Bombs
Salty, crisp prosciutto wrapped around soft, melty mozzarella – these golden, glossy bites feel fancy but come together in under 20 minutes. Watch them disappear at your next party.
Prep time: 5 minutes
Cook time: 10–14 minutes
Servings: 6–8 as an appetizer (makes 18–24 pieces)
Ingredients
8–12 slices (4–6 oz) prosciutto – cut into halves or thirds
18–24 fresh mozzarella balls – bocconcini or ciliegine, drained and patted dry
Instructions
1. Preheat & Prep
Preheat oven to 400°F (200°C). Line a baking sheet with foil. If the prosciutto is very lean, lightly grease the foil to prevent sticking.
2. Dry the Mozzarella
Pat the mozzarella balls completely dry with paper towels. This reduces excess moisture and prevents them from melting too quickly.
3. Wrap
Cut the prosciutto into strips (halves or thirds). Place one mozzarella ball at the end of each strip and roll it up tightly, tucking the ends underneath. Arrange seam-side down on the prepared baking sheet.
4. Bake
Bake for 10–14 minutes, until the prosciutto is crisp and deeply golden and the cheese inside is soft and melted. Watch closely near the end to avoid overcooking.
5. Rest & Serve
Let them cool for 2–3 minutes – this allows the cheese to set slightly. Serve warm with toothpicks for easy grabbing.
Serving Suggestions
Snack board – Arrange with olives, cherry tomatoes, sliced cucumbers, and a side of pesto or marinara for dipping.
Drink pairings – Sparkling water, prosecco, or a light beer.
Light meal – Add a fresh green salad or roasted vegetables to balance the richness.
Tips & Variations
Crispier prosciutto – For extra crunch, flip the bombs halfway through baking.
Add a kick – Tuck a small basil leaf or a sprinkle of red pepper flakes inside before rolling.
Make ahead – Assemble up to 24 hours in advance; store covered in the refrigerator. Add 1–2 minutes to bake time.
Air fryer option – Cook at 375°F (190°C) for 6–8 minutes, shaking halfway through.
Storage
Best served fresh – These are at their peak right out of the oven.
Leftovers – Store in an airtight container in the refrigerator for up to 2 days. Reheat in an oven or air fryer (not microwave) to restore crispiness.
Enjoy these irresistibly simple, low-carb appetizers!
