Homemade Turtle Candy with Pecans and Caramel

A simple, bite-sized treat combining crunchy pecans, rich caramel, and smooth chocolate. Perfect for holiday gifting or a guilt-free sweet snack.

Yield: 24 bites
Prep time: 10 minutes
Chill time: 20–30 minutes
Total time: ~40 minutes
WW Points: ~2–3 points each (using sugar-free caramel and low-sugar chocolate)

Ingredients

  • 48 pecan halves (2 per bite)

  • ½ cup sugar-free caramel sauce (or regular caramel for non-diet version)

  • ¾ cup Lily's semi-sweet chocolate chips (or any low-sugar / dark chocolate)

  • Parchment paper or silicone baking mat

Instructions

1. Prep the tray
Line a baking sheet or large plate with parchment paper.

2. Arrange the pecans
Place 2 pecan halves side by side (like butterfly wings) for each bite. Leave a small gap between clusters.

3. Add caramel
Spoon about 1 teaspoon of caramel sauce on top of each pecan pair.

4. Melt the chocolate
Microwave the chocolate chips in 20–30 second intervals, stirring between each, until smooth and fully melted.

5. Top with chocolate
Spoon about 1 teaspoon of melted chocolate over each caramel-pecan cluster, covering the caramel.

6. Chill to set
Refrigerate for 20–30 minutes, until the chocolate is firm.

7. Serve or store
Peel off the parchment and enjoy. Store in an airtight container in the refrigerator.

Tips for Perfect Turtles

  • Let caramel soften – If caramel sauce is too thick, warm it slightly for easier spooning.

  • Don't overheat chocolate – Melt slowly to prevent seizing. If chocolate seizes, spread it on parchment and use as bark instead.

  • Customize – Use milk chocolate, white chocolate, or dark chocolate. Swap pecans with walnuts, almonds, or sunflower seeds (nut-free option).

  • Make in a muffin tin – Place pecan pairs in mini muffin cups, then layer caramel and chocolate. Let set completely before removing.

Storage

  • Refrigerator: Up to 2 weeks in an airtight container.

  • Freezer: Up to 3 months. Thaw in the fridge before serving.

Traditional Version (Non-WW)

If you prefer the classic recipe:
Use regular caramel candies (unwrapped and melted with 1 tbsp cream) and semi-sweet chocolate chips (not sugar-free). Follow the same method.

Final Thoughts

Homemade turtle candy is a fun, easy treat that looks impressive but takes very little time. Whether you're making them for holidays, gifts, or just a sweet craving, these pecan-caramel-chocolate bites never disappoint. 🐢🍫
