Ingredients
For the meatloaf:
2 tbsp olive oil
2 large yellow onions, thinly sliced
2 cloves garlic, minced
1 tsp sugar
1 tsp salt
½ tsp black pepper
1 tbsp Worcestershire sauce
2 lbs (900 g) ground beef (80/20)
¾ cup seasoned breadcrumbs
2 large eggs
1 tbsp Dijon mustard
1 tsp dried thyme
1 cup shredded Gruyère or Swiss cheese (mozzarella works too)
For the topping:
½ cup shredded Gruyère, Swiss, or mozzarella
¼ cup beef broth or onion soup (optional, for brushing)
Instructions
1. Caramelize the onions
Heat olive oil in a large skillet over medium-low heat. Add the sliced onions, sugar, and a pinch of salt. Cook for 20–25 minutes, stirring often, until the onions are soft and deep golden brown. Add the minced garlic during the last 2–3 minutes of cooking. Remove from heat and let cool.
2. Preheat the oven
Set your oven to 350°F (175°C). Line a baking sheet with parchment paper or lightly grease a loaf pan.
3. Mix the meatloaf
In a large bowl, combine the ground beef, breadcrumbs, eggs, Worcestershire sauce, Dijon mustard, thyme, salt, pepper, cooled caramelized onions, and 1 cup of shredded cheese. Mix gently with your hands or a fork until just combined. Do not overmix — this keeps the meatloaf tender.
4. Shape and bake
Form the mixture into a loaf shape on the prepared baking sheet, or press it evenly into the loaf pan. If desired, brush the top with beef broth or onion soup for extra moisture and flavor.
Bake for 50–60 minutes, or until the internal temperature reaches 160°F (70°C).
5. Add the cheesy topping
In the last 5 minutes of baking, sprinkle the remaining ½ cup of cheese over the top. Return to the oven until the cheese is melted and bubbly.
6. Rest and serve
Let the meatloaf rest for 5–10 minutes before slicing. Serve warm.
