Strawberry Banana Cheesecake Salad


 This no-bake dessert salad is a potluck superstar! It combines fresh strawberries and bananas with a luscious, creamy "cheesecake" filling. It’s sweet, fluffy, and comes together in minutes. Perfect for summer barbecues, holiday gatherings, or a simple weeknight treat.

Ingredients:

  • For the "Cheesecake" Filling:

    • 1 (8 oz) package cream cheese, softened to room temperature

    • 1 (3.4 oz) package instant cheesecake-flavored pudding mix (or vanilla pudding mix)

    • 1 cup milk

    • 1 (8 oz) tub frozen whipped topping (like Cool Whip), thawed

    • 1 teaspoon vanilla extract (optional, but recommended)

  • For the Fruit:

    • 1 lb fresh strawberries, hulled and sliced

    • 3-4 ripe bananas, sliced

Instructions:

  1. Make the Cheesecake Base: In a large mixing bowl, beat the softened cream cheese with an electric hand mixer until it's smooth and creamy, with no lumps.

  2. Add Pudding and Milk: Pour in the dry pudding mix and about half of the milk. Begin mixing on low speed to combine, then slowly drizzle in the remaining milk. Increase speed to medium and beat for about 2 minutes until the mixture is thick and smooth.

  3. Fold in Whipped Topping: Gently fold the thawed whipped topping into the pudding mixture using a rubber spatula. Add the vanilla extract now if you're using it. Mix until the color is uniform and no white streaks remain. This is your creamy cheesecake filling!

  4. Combine (Gently!): Add the sliced strawberries and bananas to the bowl with the cheesecake filling. Using the spatula, gently fold everything together until the fruit is evenly coated. Be careful not to mash the bananas.

  5. Chill and Serve: For the best flavor, cover the bowl and refrigerate for at least 30 minutes to an hour before serving. This allows the flavors to meld together.

  6. Garnish: Right before serving, you can top with a few extra slices of strawberry and banana for a pretty presentation.

Tips & Notes:

  • Don't let the bananas brown: For the best results, slice the bananas right before you are ready to mix and serve the salad. Tossing them with a tiny bit of lemon juice can also help prevent browning, though it will slightly alter the flavor.

  • Soft cream cheese is key: Make sure your cream cheese is fully softened to room temperature. If it's too cold, you'll end up with a lumpy filling.

  • Make it ahead: You can prepare the cheesecake filling a day in advance and store it in the refrigerator. When you're ready to serve, simply fold in the freshly sliced fruit.

  • Add-ins: Feel free to add other fruits like blueberries, pineapple chunks, or even a handful of mini marshmallows.
