Pork Chops That Melt in Your Mouth

Yield: 4–8 servings (depending on pan size)

Prep time: 10 minutes
Cook time: 35–40 minutes

Ingredients

  • 8 thin-cut pork chops (or substitute cube steak or chicken cutlets)

  • ½ tsp garlic powder

  • ½ tsp onion powder

  • ½ tsp black pepper

  • ½ tsp paprika

  • 1 cup all-purpose flour or panko breadcrumbs (your choice)

  • ½ cup oil for frying (vegetable, canola, or avocado oil work well)

Instructions

  1. Preheat – Set your oven to 375°F (190°C). Heat the oil in a large skillet over medium-high heat until shimmering.

  2. Season – Pat the pork chops dry with a paper towel. In a small bowl, mix the garlic powder, onion powder, black pepper, and paprika. Sprinkle the seasoning evenly over both sides of each chop.

  3. Coat – Place the flour or panko in a shallow dish. Lightly dredge each seasoned chop in the coating, shaking off any excess. A thin, even layer is all you need.

  4. Brown – Carefully place the coated chops in the hot skillet, working in batches to avoid overcrowding. Fry for 2–3 minutes per side, until golden brown and crispy. The goal is color and texture, not fully cooking through.

  5. Bake – Transfer the browned chops to a baking dish or rimmed baking sheet. Place in the preheated oven and bake for 25–35 minutes.

    • Note: For cube steak or thin chicken cutlets, reduce baking time to 15–20 minutes.

  6. Rest & serve – Remove from the oven and let the chops rest for 5 minutes before serving. This locks in juices and keeps them tender.

Tips for "Melt in Your Mouth" Results

  • Don't skip the browning step – It creates a flavorful crust that locks in moisture.

  • Use thin-cut chops – Thicker chops may need longer baking; adjust time accordingly.

  • Check doneness – Pork should reach an internal temperature of 145°F (63°C). For chicken, 165°F (74°C).

  • Keep warm – If baking in batches, cover finished chops loosely with foil while the rest cook.

Serving Suggestions

Serve with mashed cauliflower, roasted vegetables, or a simple green salad. The crispy coating pairs beautifully with gravy or a squeeze of fresh lemon.
