Slow Cooker 4-Ingredient Honey Mustard Pork Roast

This is the perfect recipe for busy days when you want something that feels special with minimal effort. A simple combination of honey, Dijon mustard, and salt transforms a pork roast into a tender, flavorful dish with a glossy, caramelized sauce. Perfect for family gatherings or an easy weeknight dinner.

Ingredients

  • 3 to 4 lb boneless pork shoulder or pork loin roast, trimmed of excess fat

  • ½ cup honey

  • ½ cup Dijon mustard (or yellow mustard for a milder flavor)

  • 1½ to 2 teaspoons kosher salt

Instructions

1. Prep the slow cooker
Pat the pork roast dry with paper towels and place it into the insert of a 5- to 7-quart slow cooker.

2. Make the sauce
In a small bowl, whisk together the honey, Dijon mustard, and kosher salt until smooth. Taste and adjust the salt if needed—the mixture should taste balanced and slightly salty-sweet.

3. Coat the pork
Pour the honey mustard mixture evenly over the roast. Use tongs to turn the roast once or twice, coating all sides. If the roast has a fat cap, position it fat side up so it bastes the meat as it cooks.

4. Cook
Cover and cook on LOW for 7 to 9 hours or on HIGH for 3½ to 4½ hours, until the pork is very tender and easily shreds with a fork. The sauce will darken to a glossy golden color with caramelized edges.

5. Rest and slice
Carefully transfer the pork to a cutting board and let it rest for about 10 minutes. Slice or shred as desired.

6. Finish the sauce
While the pork rests, skim any excess fat from the surface of the sauce in the slow cooker. For a thicker, stickier sauce, remove the lid, set the slow cooker to HIGH, and let it reduce for 10–15 minutes, stirring occasionally.

7. Serve
Return the pork to the slow cooker and toss gently in the sauce, or arrange the pork on a platter and spoon the sauce over the top. Serve hot with extra sauce on the side.

  • Mustard swaps: Yellow mustard gives a milder, nostalgic flavor; coarse-grain mustard adds texture.

  • Adjust sweetness: Reduce honey to ⅓ cup and increase mustard slightly if you prefer a less sweet roast.

  • Smaller roast: For a 2 lb roast, reduce salt slightly and check for doneness about an hour earlier.

  • Leftovers: Store in the refrigerator for 3–4 days. Reheat gently in a covered skillet with a splash of water.
