Slow Cooker Peach Cobbler
Weight Watchers–Friendly | Serves 6
Ingredients
3 cups sliced peaches (fresh or canned in juice, not syrup)
1 cup sugar‑free cake mix (or regular cake mix, using less)
½ cup unsweetened applesauce (replaces butter)
2–3 tablespoons zero‑calorie sweetener (optional, depending on sweetness of peaches)
Nonstick cooking spray
Instructions
Prepare the slow cooker – Lightly spray the inside of a slow cooker with nonstick cooking spray.
Layer the ingredients – Spread the sliced peaches evenly in the bottom of the slow cooker. Sprinkle the cake mix evenly over the peaches—do not stir. Spoon the applesauce over the top.
Cook – Cover and cook on HIGH for 2–2½ hours or LOW for 3–4 hours, until the cobbler is bubbly and the topping is set.
Serve – Let cool slightly before serving. Spoon into bowls and enjoy warm.
Serving Suggestions
Top with a scoop of vanilla ice cream, a dollop of whipped cream, or a sprinkle of cinnamon.
Pair with sweet iced tea or freshly brewed coffee for a nostalgic touch.
Weight Watchers Notes
SmartPoints – Approximately 3–4 points per serving (based on 6 servings, using sugar‑free cake mix and unsweetened applesauce).
Why it’s low‑point – No butter, no syrupy peaches, and reduced sugar / sugar‑free mix keep the points down.
Tips & Variations
Fruit swap – Try sliced apples, cherries, or a mix of berries in place of peaches.
Extra crunch – Sprinkle a little cinnamon or a handful of oats over the applesauce before cooking.
No slow cooker? – Bake in a covered baking dish at 350°F for 30–40 minutes, then uncover for the last 10 minutes to lightly brown the top.
