Garlic Steak & Potato Foil Packets
These easy foil packets combine tender steak bites and seasoned potatoes with garlic butter and herbs. Whether you grill, bake, or cook them over a campfire, they deliver big flavor with minimal cleanup.
Prep time: 15 minutes
Cook time: 20–25 minutes (oven) or 20 minutes (grill)
Servings: 4
Difficulty: Easy
Ingredients
2 lbs lean sirloin steak, trimmed and cut into 2-inch chunks
1 lb baby yellow potatoes, quartered or halved
1 tablespoon minced garlic (adjust to taste)
2 teaspoons Italian seasoning (or a mix of dried oregano, thyme, and parsley)
1 teaspoon onion powder
3 tablespoons olive oil
Salt and freshly ground pepper, to taste
Optional garnish: fresh parsley, chopped
Instructions
1. Preheat
If baking, preheat the oven to 425°F (220°C). If grilling, preheat the grill to medium-high heat.
2. Season the ingredients
In a large bowl, combine the steak chunks, potatoes, garlic, Italian seasoning, onion powder, olive oil, salt, and pepper. Toss well to coat evenly.
3. Assemble the packets
Divide the mixture evenly among four 12×12-inch sheets of heavy-duty aluminum foil. Bring the edges together and fold to seal tightly, leaving a little room inside for steam to circulate.
4. Cook
Oven: Place packets on a baking sheet and bake for 20–25 minutes, until steak reaches desired doneness and potatoes are tender.
Grill: Place packets directly on the grill grates over medium-high heat. Cook for about 10 minutes per side (20 minutes total), or until steak is cooked through and potatoes are tender.
Campfire: Place packets over hot coals or on a grate, turning once halfway through, for about 20–25 minutes.
5. Serve
Carefully open the packets (watch for steam). Garnish with fresh parsley if desired. Serve directly from the foil for a rustic presentation or transfer to plates.
Variations & Tips
Add vegetables: Toss in sliced bell peppers, mushrooms, or green beans for extra color and flavor.
Spice it up: Add a pinch of red pepper flakes or swap Italian seasoning for a Cajun or taco seasoning blend.
Butter boost: For extra richness, add a pat of butter to each packet before sealing.
Make ahead: Assemble packets up to 24 hours in advance and refrigerate until ready to cook.
Cooking note: Cooking times vary based on the size of the steak pieces and potatoes. For best results, use a meat thermometer—steak should reach your preferred doneness (145°F for medium-well).
Enjoy this simple, flavorful meal that’s perfect for busy weeknights, camping trips, or backyard grilling.
