Pack celery sticks with this creamy, savory filling for a party treat you’ll keep reaching for again and again. These boats are a tasty low-carb twist on the classic "ants on a log." By swapping sweet raisins for smoky bacon and peanut butter for a zesty, cheddar-infused cream cheese, you get a keto-friendly snack that delivers salty, creamy, and crunchy goodness in every bite. They’re perfect for meal prep or a quick appetizer and hold up wonderfully in the fridge.

Ingredients

  • 8–10 celery stalks, cut into 3-inch sticks

  • 8 oz cream cheese, softened

  • 1 cup sharp cheddar cheese, shredded

  • 1/3 cup sour cream

  • 4 slices bacon, cooked crisp and crumbled

  • 2 tablespoons green onion or chives, chopped

  • 1/4 tsp garlic powder

  • 1/4 tsp onion powder

  • 1/4 tsp kosher salt

  • 1/4 tsp smoked paprika (optional)

  • 1/8 tsp black pepper

Instructions

Step 1: Prep the Celery
Rinse the celery sticks and pat them completely dry.
Tip: This is key! Any moisture can cause the cream cheese mixture to slide off instead of staying in the "boat."

Step 2: Make the Creamy Base
In a medium bowl, combine the softened cream cheese and sour cream. Mix until completely smooth and lump-free.

Step 3: Add Flavor and Mix
Stir in the shredded cheddar, crumbled bacon, chopped green onions, garlic powder, onion powder, salt, pepper, and smoked paprika (if using). Mix until everything is well combined. Taste and adjust seasoning, adding a little more salt or paprika if desired.

Step 4: Fill the Celery Boats
Use a small spoon or a butter knife to generously fill each celery stick with the cream cheese mixture. Smooth the top so it's level with the edges of the celery.

Step 5: Chill and Serve
Arrange the filled boats in a single layer in a glass dish. Cover and refrigerate for at least 20–30 minutes. This sets the filling and ensures the celery stays crisp and refreshing for every bite. Serve chilled.
