Homestyle Amish Macaroni Salad


 This creamy, crowd-pleasing macaroni salad is a staple at summer gatherings, deli counters, and family reunions for good reason. Its signature flavor—rich, tangy, and just a little sweet—comes from a classic combination of Miracle Whip and celery seed. Studded with tender macaroni, crisp vegetables, and chopped hard-boiled eggs, this salad tastes even better after a few hours in the fridge, making it the perfect make-ahead side dish.

Ingredients

For the Salad Base

  • 2½ cups uncooked elbow macaroni

  • 3 hard-boiled eggs, chopped

  • ¼ cup sweet onion, finely diced

  • 3 stalks celery, diced

  • 1 large red bell pepper, seeded and diced

For the Dressing

  • 2 cups Miracle Whip (see notes for substitutions)

  • 2 tablespoons dill pickle relish

  • 3 tablespoons yellow mustard

  • ⅓ cup granulated sugar

  • 2 teaspoons white vinegar

  • ¾ teaspoon celery seed

  • ¼ teaspoon salt

  • ¼ teaspoon black pepper

Instructions

Step 1: Cook the Macaroni
Bring a large pot of lightly salted water to a rolling boil. Add the elbow macaroni and cook according to package directions, about 8–10 minutes, until tender. Drain well and rinse under cold running water to stop the cooking and remove excess starch. Set aside to cool completely.

Step 2: Make the Dressing
In a medium bowl, whisk together the Miracle Whip, dill pickle relish, yellow mustard, sugar, white vinegar, celery seed, salt, and black pepper. Continue whisking until the mixture is smooth and the sugar has fully dissolved.

Step 3: Assemble the Salad
In a very large bowl, combine the cooled macaroni with the prepared dressing, stirring until the pasta is evenly coated. Gently fold in the chopped eggs, diced onion, celery, and red bell pepper. Be careful not to overmix so the egg pieces remain intact.

Step 4: Chill and Let the Flavors Meld
Cover the bowl tightly and refrigerate for at least 3 hours, or preferably overnight. This resting time is essential—it allows the macaroni to absorb the dressing and the flavors to develop into that signature creamy, tangy profile.

Step 5: Serve
Give the salad a gentle stir before serving. Enjoy chilled or at room temperature.

Notes on Substitutions

  • Miracle Whip vs. Mayonnaise: Miracle Whip is key to the salad's distinctive tangy flavor. If you prefer to use mayonnaise, the result will be richer and milder. To better approximate the traditional taste, add an extra splash of white vinegar or a pinch more sugar to the dressing.
