Salisbury Steak with Onion Gravy

This comforting classic features savory beef patties simmered in a deeply flavorful onion gravy. It’s the perfect hearty meal for any night of the week.

Serves: 4

Ingredients

For the Steaks:

  • 500 g ground beef (preferably 80/20 fat ratio for best flavor)

  • ½ cup plain breadcrumbs

  • 1 large egg

  • 1 tsp Worcestershire sauce

  • 1 tsp garlic powder

  • ½ tsp onion powder

  • ½ tsp fine salt

  • ½ tsp black pepper

For the Onion Gravy:

  • 2 tbsp unsalted butter or oil

  • 1 large onion, thinly sliced

  • 2 tbsp all-purpose flour

  • 2 cups beef broth

  • 1 tbsp Worcestershire sauce

  • Salt and black pepper, to taste

Instructions

1. Form the Patties
In a large bowl, combine the ground beef, breadcrumbs, egg, Worcestershire sauce, garlic powder, onion powder, salt, and pepper. Use your hands or a fork to mix just until combined—overmixing will make the steaks tough. Gently shape the mixture into 4 oval-shaped patties, about ¾-inch thick.

2. Brown the Steaks
Heat a large skillet or frying pan over medium heat with a light drizzle of oil. Add the patties and cook for 3-4 minutes per side, until a deep golden brown crust forms. They do not need to be cooked through. Transfer the patties to a plate and set aside.

3. Build the Gravy
In the same skillet over medium heat, melt the butter. Add the sliced onions and cook, stirring occasionally, for 8-10 minutes until they are soft, golden, and fragrant.
Sprinkle the flour over the onions and stir constantly for 1 minute to cook off the raw flour taste. While stirring, slowly pour in the beef broth to create a smooth sauce. Stir in the Worcestershire sauce. Bring the mixture to a simmer, scraping up any browned bits from the bottom of the pan—this is where the flavor is!

4. Simmer Together
Gently return the browned patties to the skillet, nestling them into the gravy. Reduce the heat to low, cover the skillet, and let simmer for 15-20 minutes. The patties will finish cooking through and the gravy will thicken beautifully.

5. Serve
Taste the gravy and adjust seasoning with extra salt and pepper if needed. Serve the Salisbury steaks hot, smothered in onion gravy.

Chef's Notes

  • Classic Pairing: This dish is traditionally served over creamy mashed potatoes to soak up every bit of the delicious gravy. Buttered egg noodles or steamed rice are also excellent.

  • Flavor Boost: For an even richer gravy, add 8 oz of sliced mushrooms to the skillet with the onions.

  • Make Ahead & Storage: The flavor deepens overnight! Leftovers can be stored in an airtight container in the refrigerator for up to 3 days and reheat wonderfully on the stove or in the microwave.
