50 cloves garlic, peeled
2 large onions, diced

Instructions
1. Prepare the Garlic:
Peel all the garlic cloves. For a deeper, sweeter, and less sharp flavor, you can roast them: Toss the peeled cloves with a teaspoon of olive oil and roast in a preheated oven at 350°F (180°C) for 15-20 minutes until soft and fragrant.
2. Sauté the Aromatics:
In a large pot, heat the 2 tablespoons of olive oil over medium heat. Add the diced onions and cook for 5-7 minutes, until softened and translucent.
3. Cook the Garlic:
Add the peeled (or roasted) garlic cloves to the pot and sauté for just 1-2 minutes to warm them through. Be careful not to burn the garlic, as this can make it bitter.
4. Simmer the Soup:
Add the diced stale bread to the pot, followed by the hot broth and fresh herb sprigs. Bring to a simmer, then reduce the heat to low. Let it cook for 15-20 minutes, allowing the bread to completely break down and the flavors to meld.
5. Blend Until Smooth:
Remove the herb sprigs. Using an immersion blender, purée the soup directly in the pot until it is completely smooth and creamy. If the soup is too thick, add a splash more broth or water until you reach your desired consistency.
6. Season and Serve:
Season generously with salt and pepper to taste. Ladle into bowls and top with golden croutons, a drizzle of olive oil, or a sprinkle of Parmesan cheese. Serve immediately.
