Garlic soup: 100 times more effective than natural antibiotics!

Often called “the penicillin of the kitchen,” garlic has been a home remedy for generations. This simple, comforting soup harnesses the power of garlic in a delicious, creamy form. It’s the perfect warm and soothing meal to enjoy when you’re feeling under the weather.

Prep Time: 10 minutes | Cook Time: 25 minutes | Total Time: 35 minutes
Serves: 4

Ingredients

  • 50 cloves garlic, peeled

  • 2 large onions, diced

  • 2 tablespoons olive oil (plus more for drizzling)

  • 3 cups diced stale bread (a rustic loaf works best)

  • 6 cups chicken or vegetable broth

  • A few sprigs of fresh thyme or parsley

  • Salt and freshly ground black pepper, to taste

  • For serving (optional): Golden croutons, a sprinkle of grated Parmesan cheese

    Instructions

    1. Prepare the Garlic:

    • Peel all the garlic cloves. For a deeper, sweeter, and less sharp flavor, you can roast them: Toss the peeled cloves with a teaspoon of  olive oil and roast in a preheated oven at 350°F (180°C) for 15-20 minutes until soft and fragrant.

    2. Sauté the Aromatics:

    • In a large pot, heat the 2 tablespoons of olive oil over medium heat. Add the diced onions and cook for 5-7 minutes, until softened and translucent.

    3. Cook the Garlic:

    • Add the peeled (or roasted) garlic cloves to the pot and sauté for just 1-2 minutes to warm them through. Be careful not to burn the garlic, as this can make it bitter.

    4. Simmer the  Soup:

    • Add the diced stale bread to the pot, followed by the hot  broth and fresh herb sprigs. Bring to a simmer, then reduce the heat to low. Let it cook for 15-20 minutes, allowing the bread to completely break down and the flavors to meld.

    5. Blend Until Smooth:

    • Remove the herb sprigs. Using an immersion blender, purée the soup directly in the pot until it is completely smooth and creamy. If the soup is too thick, add a splash more broth or water until you reach your desired consistency.

    6. Season and Serve:

    • Season generously with salt and pepper to taste. Ladle into bowls and top with golden croutons, a drizzle of olive oil, or a sprinkle of Parmesan cheese. Serve immediately.

    Why It’s So Comforting

Garlic contains a compound called allicin, which is studied for its antimicrobial properties. While it’s not a substitute for medical treatment, this soup is a wonderful, nourishing folk remedy. The ingredients work together to create a hydrating, easy-to-digest meal that provides comfort and warmth when you need it most.

Enjoy this soothing, flavorful soup as part of a balanced diet for a natural boost of comfort.
