Country Ranch Green Beans ‘n Potatoes with Bacon


 This creamy, savory side dish combines tender potatoes, crisp green beans, smoky bacon, and zesty ranch seasoning for a satisfying comfort-food favorite.

Ingredients

  • 1½ pounds baby potatoes, halved or quartered

  • 1 pound fresh green beans, ends trimmed

  • 6 slices bacon

  • 1 packet (about 1 oz) ranch seasoning mix

  • 3 tablespoons unsalted butter, melted

  • 2 cloves garlic, minced

  • Salt and black pepper, to taste

  • Fresh parsley, chopped (for garnish)

    Instructions

    1. Cook the potatoes
    Bring a large pot of salted water to a boil. Add the potatoes and cook for 10–12 minutes, until fork-tender. Drain and set aside.

    2. Cook the green beans
    In the same pot, boil the green beans for 5–7 minutes, until bright green and tender but still crisp. Drain and set aside.

    3. Cook the bacon
    In a large skillet over medium heat, cook the bacon until crispy. Transfer to a paper towel-lined plate, crumble, and set aside. Reserve 1 tablespoon of the bacon grease in the skillet.

    4. Prepare ranch butter sauce
    In a small bowl, whisk together the melted butter, ranch seasoning mix, and minced garlic until well combined.

    5. Combine and coat
    Place the cooked potatoes and green beans in the skillet with the reserved bacon grease. Warm them over medium heat for 2–3 minutes, tossing gently. Add the crumbled bacon, then pour the ranch butter sauce over everything. Stir gently to coat evenly.

    6. Serve
    Season with salt and pepper to taste. Garnish with chopped parsley and serve warm.

    Tips:

    • For extra crispiness, roast the boiled potatoes in the oven at 400°F for 10 minutes before combining with the green beans and sauce.

    • Substitute fresh dill or chives for parsley if desired.

    • Add a sprinkle of grated Parmesan cheese before serving for an extra layer of flavor.
