Slow Cooker 3-Ingredient Queso Dip
This creamy, cheesy queso is my go-to when I need a crowd-pleaser in minutes. With just three ingredients and no stovetop hovering, it’s perfect for game day, movie night, or last-minute guests. Mild enough for kids, rich enough for adults—it’s the effortless dip that always disappears.
Ingredients
1 lb (16 oz) processed melting cheese (like Velveeta), cubed
1 can (10 oz) diced tomatoes & green chiles (like Rotel), undrained
1 cup whole or 2% milk
Optional add-ins (after melting):
Cooked ground beef or chorizo, a spoonful of salsa, chopped pickled jalapeños, or a pinch of chili powder.
Instructions
Combine: Add cubed cheese, the entire can of tomatoes (with juices), and milk to a small (2–4 quart) slow cooker.
Cook: Cover and cook on LOW for 1½–2 hours or on HIGH for about 1 hour, until fully melted.
Stir & Serve: Stir until smooth. If too thick, stir in an extra splash of milk. Switch to the WARM setting and serve directly from the slow cooker.

Classic: Tortilla chips, pretzel bites, or sliced baguette.
Veggie-friendly: Bell pepper strips, carrot sticks, celery, or broccoli florets.
