Ingredients
3 large sweet potatoes
1 cup shredded cheddar cheese
6 slices bacon, cooked and crumbled
2 tbsp butter
Salt and pepper, to taste
Chopped chives or green onions (optional, for garnish)
Instructions
Prepare the Sweet Potatoes
Wash and scrub the sweet potatoes thoroughly. Pat them dry.
Prick each potato several times with a fork to allow steam to escape.
Slow Cook
Place the sweet potatoes in the slow cooker.
Cover and cook on LOW for 6-8 hours (or until tender when pierced with a fork).
Preheat Oven & Prep Potatoes
Once cooked, carefully remove the sweet potatoes and let them cool slightly.
Preheat the oven to 400°F (200°C).
Stuff the Potatoes
Cut each sweet potato lengthwise (without slicing all the way through).
Fluff the insides gently with a fork.
Add a small pat of butter to each, then season with salt and pepper.
Stuff with shredded cheddar cheese and crumbled bacon.
Bake to Melt Cheese
Place the stuffed potatoes on a foil-lined baking sheet.
Bake for 10-15 minutes, or until the cheese is bubbly and melted.
Serve
Garnish with chopped chives or green onions (if desired).
Serve warm as a hearty side or main dish.
