Amish Breakfast Casserole


 This hearty, cheesy casserole is the ultimate crowd-pleasing breakfast. Packed with bacon, hash browns, eggs, and three kinds of cheese, it’s rich, savory, and perfect for make-ahead mornings—whether for a holiday brunch or a week of easy, satisfying meal prep.

Ingredients

  • 1 lb bacon, diced

  • 1 medium sweet onion, chopped

  • 9 large eggs, lightly beaten

  • 4 cups frozen hash browns, thawed

  • 2 cups shredded sharp cheddar cheese

  • 1¼ cups shredded Swiss cheese

  • 1½ cups small-curd cottage cheese

Instructions

1. Prep: Preheat oven to 350°F (175°C). Generously grease a 9x13-inch baking dish.

2. Cook Bacon & Onion: In a large skillet over medium-high heat, cook the diced bacon and onion together until the bacon is crispy and the onion is tender, about 10–12 minutes. Drain excess grease and let cool slightly.

3. Combine: In a large bowl, mix the bacon-onion mixture, beaten eggs, thawed hash browns, cheddar, Swiss, and cottage cheese. Stir until evenly combined.

4. Bake: Pour the mixture into the prepared dish and spread evenly. Bake for 45–50 minutes, until the eggs are fully set, the top is golden, and the edges are bubbly.

5. Rest & Serve: Let the casserole rest for 10 minutes before slicing. Serve warm.

  • Make Ahead: Assemble the casserole (cover tightly) and refrigerate overnight. Bake as directed, adding 5–10 minutes if needed.

  • Customize: Substitute sausage for bacon, add diced bell peppers, or mix in chopped spinach.

  • Thaw Hash Browns: For even baking and the best texture, be sure to thaw the hash browns completely before mixing.
