Grandma’s Stuffed Celery

This is the classic, no-fuss appetizer that never goes out of style. Crisp, cool celery stalks are filled with a  creamy, tangy, and slightly nutty  cheese spread. It’s a simple recipe that evokes nostalgia and is always a crowd-pleaser at gatherings.

Prep Time: 15 minutes
Chill Time: 30 minutes
Total Time: 45 minutes
Servings: 6-8 as an appetizer

Ingredients

  • 1 whole bunch of celery, fresh and crisp

  • 1 package (8 oz)  cream cheese, softened

  • 1/2 cup shredded sharp cheddar cheese

  • 1/4 cup finely chopped walnuts

  • 1/4 teaspoon garlic powder

  • 1/4 teaspoon onion powder

  • Salt and black pepper, to taste

  • Paprika or fresh chopped chives, for garnish (optional)

    Instructions

    1. Prepare the Celery:
Wash the celery stalks thoroughly. Pat them completely dry with a paper towel. Trim off the leafy ends and the tough, white base. Cut the stalks into 3- to 4-inch long pieces.

    2. Make the Filling:
In a medium bowl, combine the softened  cream cheese, shredded cheddar, chopped walnuts, garlic powder, and onion powder. Season with a pinch of salt and pepper. Mix vigorously with a spoon or a hand mixer until the ingredients are well-blended and the mixture is smooth and spreadable.

    3. Fill the Celery:
Using a small spoon, a butter knife, or a piping bag, fill the groove of each celery piece with the cream  cheese mixture, spreading it evenly.

    4. Garnish and Chill:
Arrange the  stuffed celery on a plate or platter. For a classic finish, lightly sprinkle with paprika or chopped chives.
Refrigerate for at least 30 minutes to allow the flavors to meld and the filling to firm up.

    5. Serve:
Arrange on a serving platter and enjoy cold!

🌟 Success Tips & Delicious Variations

    • For the Best Crunch: Choose a bunch of celery that is firm and tightly packed, with no limp or rubbery stalks.

    • Easy Spreading: Ensure your cream cheese is fully softened at room temperature to avoid a lumpy filling and to make it easier to mix.

    • Make-Ahead: You can prepare the filling up to 2 days in advance and store it covered in the refrigerator. Assemble the celery sticks a few hours before serving.

    • Variations to Try:

      • The Reuben: Add 1/4 cup finely chopped corned beef and 1 tablespoon of Thousand Island dressing to the filling.

      • Everything Bagel: Replace the cheddar and walnuts with 2 tablespoons of Everything Bagel Seasoning.

      • Vegan Version: Use your favorite plant-based cream cheese and shredded cheese.

      • Bacon Lover’s: Substitute the walnuts with 1/4 cup of real bacon bits.
