Cranberry Orange Bread with Simple Glaze
Bright, Moist, and Perfect for the Holidays
This festive yogurt-based loaf is bursting with tart cranberries and fresh orange zest, then soaked in citrus syrup and topped with a sweet orange glaze. It’s the kind of treat that works for breakfast, brunch, or a cozy afternoon snack—and it’s always a hit at holiday gatherings.
Ingredients
For the Loaf
- 1½ cups + 1 tbsp all-purpose flour
- 2 tsp baking powder
- ½ tsp kosher salt
- 1 cup plain whole-milk yogurt
- 1 cup sugar
- 3 large eggs
- 2 tsp grated orange zest
- ½ tsp vanilla extract
- ½ cup vegetable oil
- 1½ cups cranberries (fresh or thawed frozen)
For the Syrup
- ⅓ cup fresh orange juice
- ⅓ cup sugar
For the Glaze
- 1 cup confectioners’ sugar, sifted
- 2–3 tbsp fresh orange juice
Instructions
- Prep the Pan Preheat oven to 350°F (175°C). Grease and flour a 9×5-inch loaf pan.
- Make the Batter Whisk yogurt, sugar, eggs, zest, vanilla, and oil. Sift dry ingredients and stir into wet. Toss cranberries with 1 tbsp flour and gently fold in.
- Bake Pour into pan and bake 50–55 minutes, until a toothpick comes out with moist crumbs. Cool 10 minutes, then transfer to a wire rack.
- Make the Syrup Simmer orange juice and sugar until dissolved. Poke holes in warm loaf and brush syrup over top and sides. Let soak and repeat.
- Glaze It Whisk sugar and orange juice until thick but pourable. Drizzle over cooled loaf and let set for 15 minutes.
